@panko breadcrumbs{¼%cup}
@mayonnaise{¼%cup}
@balsamic vinegar{1%tbsp}
@red onion{1%medium}
@zucchini{2%medium}
@ketchup{2%tbsp}

@dried oregano{1%tsp}
@sugar{2%tsp}
@olive oil{2%tbsp}

Preheat oven to 450°F. Mince or grate garlic. Halve, peel, and thinly slice red onion. Halve zucchini lengthwise and widthwise, then slice into thin wedges.

In a #small bowl{}, combine mayonnaise and as much garlic as you like (start with ¼%tsp). Season with salt and pepper.

Heat a drizzle of olive oil in a #large pan{} over medium heat. Add red onion. Cook, tossing occasionally, until lightly caramelized ~{10%minutes}. Add balsamic vinegar and 1%tsp sugar. Cook until reduced and syrupy. Season with salt and pepper. Remove from pan and set aside in a #small bowl{}.

Meanwhile, toss zucchini wedges in a #medium bowl{} with ½%tbsp garlic aioli, panko breadcrumbs, dried oregano, and a large pinch of salt and pepper. Spread zucchini onto a lightly oiled #baking sheet{}. Place in oven ~{15%minutes}, flipping once, until golden brown. [- - Some breadcrumbs will fall off, which is fine! -]

Wash out the #large pan{}. Heat a drizzle of olive oil over medium-high heat. Form ground beef into 2 patties and season with salt and pepper on both sides. Add patties to pan. Cook ~{5%minutes} per side, until almost cooked to desired doneness. Top each with monterey jack cheese, then cover to allow it to melt ~{1%minute}.

Meanwhile, split brioche buns and place in oven to toast ~{4%minutes}. Spread buns with ketchup, then top each with a burger and as much red onion marmalade as you like. Serve with zucchini fries on the side. > Dip the fries in any remaining ketchup or aioli!
